This is one of my favourite dishes of 2020. It’s super quick and easy to make and it tastes amazing!
The most important part of the dish is the Walnut Sauce. Once you have all your ingredients out and ready, it only takes a few minutes to turn everything into a creamy masterpiece.

A simple blender will help in combining the ingredients together. I like to use this type but any blender will do.
Peel the garlic and add to the blender together with a pinch of salt. Add the walnuts and blend to a smooth texture. Lastly add the juice from 1/2 a lemon, parmesan cheese (or equivalent), milk and the olive oil. Set aside until the Tortellini is cooked.


For the next step, I like to cheat a little to speed up the process. Instead of making the Tortellini from scratch I like to pick up one of the pre-made options in my local shop. Tesco and Lidl have a great selection! You can also use Ravioli to have even more variety of flavours as both Tortellini and Ravioli come with different fillings. Cook the Tortellini as per instructions on the packaging (usually less than 5 mins).

When the pre-made Tortellini is cooked drain it in the sink and then place back in the saucepan on low heat. Add the walnut sauce and toss together until everything is well combined. Take care not to burn the Tortellini.
Once the Tortellini is coated in the walnut sauce, it is ready to be served. Dish out onto a plate and top off with some grated parmesan cheese, a drop of olive oil and black pepper.

- 80g Walnuts

- 5 Tbps of olive oil
- Juice ½ lemon
- 50g Grated parmesan cheese (or equivalent)
- 50ml of milk

- 1 pack of Tortellini or Ravioli

Tortellini with Creamy Walnut Sauce

Ingredients
- 80g Walnuts

Blend together until well combined. Season with salt and pepper to taste and set aside.

In a large pot of salted boiling water, add the Tortellini and cook as instructed on the packet.
- After the Tortellini is cooked, drain and place back in the pot. Add the walnut sauce and toss together on low heat until well combined.
- Once the Tortellini is coated in the walnut sauce, it is ready to be served. Top off with grated parmesan cheese, a drop of olive oil and black pepper.
